These healthy vegan lettuce wraps are a light, yet satisfying lunch idea! This is a low carb vegan recipe – perfect if you want to include more plant-based, but also less carbohydrate-rich meals into your meal plan.

So I had a week of not so great discoveries this far…oh and I’m just realizing it’s Valentine’s Day! Happy Valentine’s Day, everyone! Today, instead of red velvet cake we’re eating some garlic, which is also an aphrodisiac, so we’re doing well.

So, this week I decided to make some blood tests and it turns out… I’m sitting here, eating healthy most of the time, exercising, but at the same time I’m suffering from vitamin D deficiency I hadn’t even noticed.

I’ve been going out for walks, been making sure to stay in the sun for 30 minutes a day, but I guess it’s not enough. I also had been taking a vitamin D supplement last year, but not regularly. So now, I’m taking a supplement, making sure to go out for my daily walks, even though apparently they don’t do much and I also decided to start eating fish more often, 2-3 times a week (fish is one of the few foods that contains vitamin D).

It wasn’t the best news, but you know what? I was kinda relieved. I’m not trying to be dramatic or a weirdo from the 90’s, but it felt good to know why I’m feeling tired and have back and neck pain all the time. I was also relieved that it’s not all my fault. It also gave me hope, that maybe I don’t have to keep being tired and in pain for the years to come even if I skip my Pilates or don’t keep a strict diet.

What a depressing little story, right? Happy Valentine’s Day to you too! Man I hope this supplement works fast and I get back to being a fun person again.

Obviously I’m not sharing this boring story because I want to be a party pooper, but because this made me realize on another level, just how important it is to know of any nutritional deficiencies, since it’s really easy to correct these. On the other hand, it’s also really easy to confuse deficiencies with serious diseases. It’s a shame that these kinds of tests aren’t done regularly and people are treated with a ton of wrong medications to simply mask symptoms. So if you have any health complaints, make sure to exclude nutrient deficiencies, that’s all I’m saying.

Anyway, let’s get back to these lettuce wraps, because they’re really easy, light and have a lot of flavor. You only need a food processor to cook them.

I seasoned them with some tamari sauce and added toasted sesame seeds, because I was craving Asian flavors.

These healthy lettuce wraps are a light and flavorful easy dinner that is vegan, low-carb and anti-inflammatory.

Total Time 20 minutes

Ingredients

Nut-Meat

  • 1 cup walnuts, halves
  • 1/4 cup sesame seeds, toasted
  • 1 garlic clove
  • 1 tbsp tamari sauce
  • 1 tsp vinegar
  • 1 tsp chili flakes
  • 1/2 tsp turmeric
  • 1/2 tsp coriander
  • 1/2 tsp ginger, ground

Additions

  • 1/3 cup zucchini, sliced
  • 1/2 carrot, stripes or cubes
  • 1 tbsp ground fresh ginger
  • 1/2 red pepper, sliced
  • 1 scallion
  • 1/3 cup cilantro or basil
  • salt and pepper to taste

Instructions

  1. Make the nut meat by putting all nut-meat ingredients into a food processor and pulsing until chunky. Taste and add salt and pepper if needed. (usually it's salty enough).
  2. Transfer nut meat into a bowl and mix well with the rest of the ingredients. Serve on lettuce leaves and add a sauce if you want to (I blended a zucchini with garlic and olive oil - was delicious).
