The inspiration

I’m a big fan of Baileys Irish Cream liqueur and quite a few years ago I made my own copycat Baileys here on the blog. I then made it again and again at the Country Living Magazine Christmas Fair in demos and it always went down a treat.

Anyways I wanted to make something similar in taste but even easier to make as I am doing demos right now at this year’s Country Living Fair in Glasgow.

The idea for toffee vodka liqueur was formed.

Ingredients for toffee vodka

As I’ve already said, there are only 2 ingredients for this little recipe;

  • Vodka
  • Toffees

What type of vodka?

Use a basic generic store brand vodka. Leave that Stolly and Grey Goose in the co*cktail cabinet. You don’t want anything fancy here as you are adding the flavour so a wonderfully flavoured vodka is a waste here.

Toffees

I used a bag of toffees from the local Post Office. Werther’s Originals would also be a good choice. Just simple good old-fashioned plain toffees. Again, nothing fancy, please.

How to make this toffee liqueur

Simply chuck the toffees into a jar and pour over the vodka. Now put it in a cupboard for a week and just give the jar a shake every couple of days to help the toffees dissolve in the vodka.

Now, this is the hard part because you’ll be oh so tempted to have a wee taste as you see it going from just a jar of vodka with some brown toffees at the bottom to a gorgeously creamy liqueur.

What does this liqueur taste like?

Yes, it does taste a bit like the infamous Baileys liqueur but it is MUCH stronger. Do remember that this is vodka and toffees with nothing else in there to dilute the alcohol.

So don’t guzzle it down as you do with that famous Irish liqueur. Sip this with caution!

How long will this liqueur keep?

Your toffee vodka liqueur will keep for up to a year in a cool dark place, but I bet it doesn’t last that long! When storing the liqueur may separate so just give it a good shake before using.

How to serve toffee vodka

You can serve it well chilled as a shot or with ice just as you would Baileys.

co*cktail ideas

The Apple Pie

50ml toffee vodka, 50ml whisky, enough cider to top up your glasses, lots of ice and a slice of apple and cinnaamon stick to decorate.

Fill a glass with ice and add the toffee vodka and whisky, now pour on the cider and give it a stir. To finish this off add a cinnamon stick and a slice of apple to the side of the glass. Serves 2

The Ultimate Espresso Martini

100ml toffee liqueur, 1 tbsp sugar syrup, 50ml coffee liqueur (like Kahlua or make your own coffee liqueur with my recipe) and 50ml chilled espresso coffee. A few coffee beans to decorate if you have them.

Make the sugar syrup by heating 100g caster sugar with 50ml water till sugar dissolves and it thickens to a syrup. Leave it in the fridge to chill.

Make your coffee and leave that to chill completely.

Put all the ingredients into a co*cktail shaker (if you don’t have one of those use a big jam jar) with lots of ice and shake it like mad till the shaker/jar is icy cold on the outside.

Pour into a martini glass. If you are using a jar you will have to pour your co*cktail through a tea strainer to hold back the ice.

Top with a couple of coffee beans.

This serves 2 people.

Ingredients

  • 500 ml vodka any basic vodka
  • 70 g toffee I used 14 toffees

  • Put the toffees in a jar and pour in the vodka, put on a tight-fitting lid

  • Set aside in cupboard for 1 week shaking every day or so to help the toffees dissolve in the vodka

  • Decant into a nice sterilised bottle
